Founded in 2015 in Geneva by Dr. Xavier Righetti, L'Apaisée specializes in clean hoppy ales and barrel-aged mixed fermentations. The brewery's journey began with Xavier and Laetitia Righetti’s ambitious project, inspired by their 2014 stay in Quebec, where they fell in love with the local craft beer scene. Enthralled by hoppy IPAs, Xavier started brewing his own beer in his Geneva kitchen, dissatisfied with the local offerings. With the help of friends and after numerous experiments, he acquired a more advanced brewing system designed by Daniel Michel and set up his brewery in a friend's space at the Vélodrome.
In 2018, L'Apaisée moved to a larger facility in Geneva, enabling increased production with new equipment and larger fermenters. The brewery is known for using organic ingredients and crafting original beers. In 2019, Xavier and his partners opened La Jonquille, a bar that quickly became a go-to spot for enjoying their artisanal brews.
